For the filling, grab:
3 med/large sweet potatoes
1 cup granulated sugar
2 tbsp vanilla extract
1 egg
1 stick butter
1/4 cup heavy cream

For the topping:
1 cup brown sugar
1/3 cup all purpose flour
1/2 cup pecans
1/3 cup old fashioned oats
1/3 cup melted butter

Then you’re gonna:
1. Boil or bake your sweet potatoes until fork tender.
2. Combine ingredients for the topping and set aside.
3. Mash sweet potatoes together with butter, sugar, vanilla, and cream.
4. Taste test to make sure it’s to your liking!
5. After tasting, add your egg to the mixture and stir to combine.
6. Pour the sweet potato mixture into a greased baking dish and bake on 375 degrees for 45-50 min or until it’s set in the middle.
7. Remove from the oven and sprinkle the crumble topping over the top.
8. Bake for another 20 min then allow to cool for 30 min before serving. Enjoy!
