Ingredients:
For Boiling the Chana:
Soaked chickpeas (chana): 1 big bowl
Tea: 1 tbsp (tied in a cloth)
Cinnamon stick: 1 piece
Big cardamom: 1 piece
Small cardamom: 1–2 pieces
Cloves: 2–3
Black pepper: 4–5 pieces
Star anise: 1 piece
Water, salt, and oil
For Dry Spice Mix:
Cinnamon stick: 2–3 pieces
Coriander seeds (sukha dhaniya): 1 tbsp
Small cardamom: 2–3 pieces
Big cardamom: 1 piece
Black pepper: 4–5 pieces
Cloves (laung): 4–5
For Cooking the Chana:
Boiled chana
Strained water from the boiled chana
Dry spice mix: 2 tbsp
Kasuri methi: 1 tsp
Amchur powder: 1 tsp
Cumin powder (jeera powder): 1 tbsp
Pomegranate powder (anar dana powder): 1 tbsp
Black salt: 1 tsp
Salt: 1 1/2 tsp
Red chili powder: 1 tsp
Tamarind chutney paste (imli chutney): 1 tbsp
Ghee: as needed
Green chilies: 2–3 (chopped)
Asafoetida (hing): 1 tsp
Ginger julienne: 1 tsp
Fresh coriander and onions: for garnishing
Step-by-Step Instructions:
1️⃣ Boil the Chana:
Tie tea, cinnamon, big and small cardamom, cloves, black pepper, and star anise in a cloth to make a spice bag.
In a pressure cooker, add soaked chana, water, oil, salt, and the spice bag. Cook until the chana is soft and tender.
2️⃣ Prepare the Dry Spice Mix:
Dry roast cinnamon, coriander seeds, small and big cardamom, black pepper, and cloves. Grind into a fine powder.
3️⃣ Cook the Chana:
Strain the water from the boiled chana and set it aside.
In a pan, add boiled chana, the dry spice mix, Kasuri methi, amchur powder, cumin powder, anar dana powder, black salt, red chili powder, and regular salt. Mix well.
4️⃣ Add Strained Water & Tamarind Chutney:
Pour the reserved water into the chana. Add tamarind chutney and mix thoroughly.
5️⃣ Prepare the Tadka:
In a small pan, heat ghee. Add asafoetida, green chilies, and ginger julienne. Let it sizzle, then pour over the chana.
6️⃣ Cook Until Thickened:
Simmer the chana on low heat until the gravy thickens and the flavors combine.
7️⃣ Garnish & Serve:
Garnish with fresh coriander and onion slices. Serve hot with puris or bhature.
