Homity Pie, TRADITIONALLY known as a BRITISH open vegetable pie or Devon Pie

The exact origins of the pie are not definitively known, and no specific individual has been credited with its invention. In some circles, it's referred to as "Devon Pie," suggesting a connection to Devonshire. The pie gained broader popularity thanks to Cranks Vegetarian Restaurant, which opened in London in the early 1960s, when vegetarian dishes were not mainstream, particularly in restaurants.

The Homity Pie is a quintessential example of a dish born out of necessity and resourcefulness, reflecting the resilience and creativity of those who lived through the war years.

Shortcrust pastry (enough to line your pie dish)
Potatoes, peeled and cubed Boiled
Onions, chopped if using
Leeks, chopped
2 small handfuls of spinach
A good pinch of dried thyme or Fresh thyme, finely chopped
Double cream about ½ cup just to put the moisture in the pie
1 tbsp cornstarch
Grated Cheddar cheese
Butter
Salt and pepper for seasoning to taste



Shortcrust Pasty
420 g All Purpose Flour
65ml Water
150g Shortening
50g Butter / Marg
1 medium egg
1 tsp Apple cider vinegar
1 tsp salt
