Anda Ghotala is a delicious Indian street food dish made with scrambled eggs and spices, commonly found in Maharashtra, especially Mumbai. It is a spicy, tangy, and flavorful dish that combines eggs with a spicy tomato-onion base. Here's how you can make it
Ingredients:
3 eggs (2 boiled and 1 raw)
1 medium onions (finely chopped)
1 medium tomatoes (finely chopped)
1 green chili (chopped)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
1 teaspoon coriander powder
Salt to taste
Fresh coriander leaves (for garnish)
2 tablespoons oil and butter
Lemon wedges (for serving)

Instructions:

1.Boil Eggs:
Boil 2 eggs, peel them, and chop them into bite-sized pieces Set aside. Or greet them directly into the pan

2. Cooking the Masala
Heat oil and butter in a large pan. Add cumin seeds and let them sizzle for a few seconds.
Add finely chopped onions and saute them until they turn golden brown.
Add the ginger-garlic paste and green chilies. Saute until the raw smell of ginger-garlic disappears.
Add the finely chopped tomatoes and cook until they soften and the oil starts to separate from the masala.

3. Spice it Up:
Add turmeric powder, red chili powder, coriander powder, and gram masala. Mix well and cook for another 2-3 minutes to ensure the spices blend into the mixture.

4. Add Boiled Eggs
Add the chopped boiled eggs or greet them directly into the pan into the mixture and gently mix everything together. Add water if needed

5. Add Raw Eggs:
Add oin in pan and crack it directly into the pan add salt, red chilli powder and coriander leaves

6. Finish
Adjust salt according to taste, and garnish with freshly chopped coriander leaves.

7. *Serve:*
Serve Anda Ghotala hot with buttered pav (Indian bread rolls) or paratha, and lemon wedges on the side.
