Here's a delicious recipe for Veg Biryani, a fragrant and flavorful rice dish filled with spices and vegetables:

Ingredients:
2 cups Basmati rice
1 cup mixed vegetables (carrots, peas, potatoes, beans, cauliflower)
2 onions, thinly sliced
2 tomatoes, chopped
1 cup yogurt
1/4 cup mint leaves, chopped
1/4 cup coriander leaves, chopped
2 green chilies, slit
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons biryani masala
1 teaspoon garam masala
2-3 cloves
2-3 cardamom pods
1-inch cinnamon stick
2 bay leaves
4-5 tablespoons oil or ghee
Salt to taste
Saffron strands soaked in 2 tablespoons of warm milk (optional)
Fried onions for garnish
Lemon wedges for garnish

Instructions:
1. *Cook the Rice*: Rinse the Basmati rice thoroughly and soak it for 30 minutes. Cook the rice in boiling water with a pinch of salt until 70% done. Drain and set aside.
2. *Sauté Onions*: In a large pan, heat oil or ghee. Add sliced onions and sauté until golden brown. Remove half of the onions for garnish.
3. *Cook Vegetables*: In the same pan, add ginger-garlic paste and green chilies. Sauté for a minute. Add chopped tomatoes and cook until soft. Add turmeric, red chili powder, biryani masala, and garam masala. Stir well.
4. *Add Vegetables and Yogurt*: Add the mixed vegetables and sauté for a few minutes. Add yogurt, chopped mint, and coriander leaves. Cook until the vegetables are tender.
5. *Layering*: In a large pot, layer half of the partially cooked rice. Add the vegetable mixture on top. Layer the remaining rice over the vegetables.
6. *Add Spices*: Add cloves, cardamom, cinnamon stick, and bay leaves on top. Drizzle with saffron milk (if using) for added flavor and color.
7. *Cook on Low Heat*: Cover the pot with a tight-fitting lid. Cook on low heat for 15-20 minutes or until the rice is fully cooked and the flavors are well absorbed.
8. *Garnish*: Garnish with fried onions and lemon wedges.
