SOUTH INDIAN THALI


MANGO RICE

Ingredients:

4 cups of cooked Ambe Mohar rice
1 cup of raw mango grated
1 cup of freshly grated coconut
4-5 dry red chillies
1 tbsp of mustard seeds
1/2 tsp of turmeric powder
Salt to taste
4-5 tbsp of sesame oil
1/2 tsp of mustard seeds
1 pinch hing
1/2 cup of peanuts
A sprig of curry leaves
1 sprig of curry leaves to it
2 red dry chillies
1/2 cup of freshly chopped coriander




Method:

Take 4 cups of cooked Ambe Mohar rice
Grind 1 cup of raw mango grated
Add 1 cup of freshly grated coconut
4-5 dry red chillies
1 tbsp of mustard seeds
1/2 tsp of turmeric powder
Grind it to a coarse paste without using water
Add it to the rice
Add salt to taste
Mix the masala well with the rice

For tempering
Heat 4-5 tbsp of sesame oil
Heat 1/2 tsp of mustard seeds and let them splutter
Add 1 pinch hing
1/2 cup of peanuts, sauté the peanuts for a minute
A sprig of curry leaves
Sauté the peanuts for a minute
Add 1 sprig of curry leaves to it
Add 2 red dry chillies
Pour the tadka to the rice
Add 1/2 cup of freshly chopped coriander
Mix it well



SAAR

Ingredients:

1/2 tsp of pepper
1/2-3/4 cup of fresh coconut grated
1 tbsp of rassam powder
1 tbsp of thick tamarind pulp to it (soaked in water)
1 tbsp of jaggery
1 cup of boiled toor dal boiled with hing and haldi powder
1 tomato finely chopped
2 cups of fresh green peas (boiled)
Salt to taste
3 tbsp of ghee
1 tsp of mustard seeds
1 tsp of cumin seeds
1 pinch of hing
1 sprig of curry leaves
1 tsp of rassam powder


Method:

Take 1/2 tsp of pepper
Roast it along with a tbsp if cumin seeds
Add 1/2-3/4 cup of fresh coconut grated
Roast these ingredients till golden in colour
Shut the flame
Wait for it to cool down

Add 1 tbsp of rassam powder
Add 1 tbsp of thick tamarind pulp to it (soaked in water)
Add 1 tbsp of jaggery

Grind it to a coarse fine paste


1 cup of boiled toor dal boiled with hing and haldi powder
Add 1 tomato finely chopped
Bring the dal to a boil
Add 2 cups of fresh green peas (boiled)
Add the ground paste
Mix it well
Add salt to taste
Give it a good boil and simmer it for 5 minutes

For the tadka
Heat 3 tbsp of ghee
Splutter 1 tsp of mustard seeds
1 tsp of cumin seeds
1 pinch of hing
Add 1 sprig of curry leaves
Shut the flame
Add 1 tsp of rassam powder to it
Mix it well
Add it to the saar
Cover it immediately
Serve after 5 minutes



BATATA TALASAN

Ingredients:

1/2 cup of coconut oil
1/2 kg sliced potatoes
1/2 tsp of turmeric powder
1 tbsp of red chilli powder
Salt to taste


Method:

Heat 1/2 cup of coconut oil
Add 1/2 kg sliced potatoes to the oil
Fry till potatoes are crisp
Add 1/2 tsp of turmeric powder
1 tbsp of red chilli powder
Add salt to taste
Mix well
Cook till it’s done
