This watermelon look-alike ice cream treat would look great next to a piece of cake at a birthday party :)

The term "bombe" comes from the French word "bombé" (pronounced bom-bay) that means "domed" and describes the round shape of this dessert.

1 pint pistachio ice cream softened (or add green food colour to light coloured ice cream)
1 pint vanilla ice cream softened
1 pint strawberry ice cream softened
1/2 cup chocolate chips
Green and red food colouring if desired.

I measured the bowl I used and it was a 2 quart bowl.
Line a 2 quart (metal or glass best) with plastic wrap and chill in the freezer for at least 30 minutes.

Combined the pistachio (or vanilla ice cream) with a couple of drops of food colour and stir until you get the desired shade of green. Quickly spread the green ice cream over the bottom and sides of the bowl.
**Go up the sides to about an inch from the edge (this I Did Not do in the video. If I would have left an inch space at the top of the bowl, I would have had enough pink ice cream and would not have had to cut some of the ice cream off at the end)
Freeze in the freezer for about 2-3 hours or until firm.

Remove from freezer and then repeat with the white vanilla layer, pressing the vanilla layer firmly to the green layer to make sure there are not large air pockets.
Freeze again until firm (about 2 hours).

Stir the chocolate chips into the strawberry ice cream and add red food colour if desired to achieved the desired shade.
Place the strawberry ice cream in the center of the bowl over the other two layers, pressing down to make sure there are no air pockets.

Cover with plastic wrap and freeze for several hour or overnight. You can't skip this step as it will take several hours to properly chill the ice cream and this will make it possible to cut nice slices.

Remove from freezer, invert to remove from bowl, remove plastic wrap and cut into slices. I help if you chill the cutting board or plate that you are cutting this on. It will help keep it from melting and sliding around. Serve immediately. I suggest placing the second half of the "melon" in the freezer while slicing the first, this stuff melts fast.
