Hello Friends, welcome back to my channel. Today I'm showing you an interesting, very simple, yummy and healthy recipe...that is Gutti Dondakaya Curry or Stuffed Tindora Fry. This is one of the healthy variation of traditional currie. Coccinia/Ivy Gourd/Dondakaya/Tindora is a good source of Vitamin A, C and it is popular across South India, South and Southeast Asia. It is made with very simple ingredients like Coccinia/Ivy Gourd, Curry Powder, Turmeric and other simple and easily available spices. It is a very tasty recipe and would be good side dish for Chapatis, Rice, Rotis. It is so easy to prepare and can be done in 10-15 mins. So, I'm showing you here how to make it at home in a healthier way with simple spices and ingredients.

Ingredients:
250 gms Coccinia/Ivy Gourd/Dondakaya/Tindora
1 Cup Curry Powder
1/4 Tsp Turmeric
Salt to Taste
3 Tbsp Oil

Recipe:
Remove the head and tail of Ivy gourds and steam them for 7 to 8 mins in a pressure cooker as shown
Pour some water in a pressure cooker and also a small vessel and place it in pressure cooker
Place an Idli stand on top of the vessel
Now arrange the Coccinia/Ivy gourds on this and steam it for 7 to 8 mins on a medium flame
In this process, with less oil we can make the entire curry
Now remove the cooked Coccinia and let it cool down for sometime
Slit a + at the top for all the Coccinia and also cut only 3/4th and not fully
Here, take 1 Cup of Curry Powder (Recipe is available on my Channel) and mix it with some oil as shown
Note - The mixture will be wet when mixed with oil and can be easily stuffed in the Coccinia
Stuff this mixture inside all the slit Coccinia
Take a pan, add 3 Tbsp Oil and let it heat
Now add all the stuffed Coccinia one by one into the pan and shallow fry
Add Salt to taste
Add 1/4 Tsp Turmeric
Mix the Coccinia in between, cover and cook for 5 to 10 mins
Add the leftover Curry powder mixture as well, cover and cook for 5 mins
Note - Here, I did not add salt to the curry powder while preparation, so I have added sufficient salt while cooking the curry itself
That's it Delicious, Yummy and Healthy version of Gutti Dondakaya Kura/Stuffed Coccinia Fry is ready!!
