How to Make Perfect Rainbow Cake 🌈 I Mintea Cakes

Victoria Sponge Cake Ingredients (Double this recipe) :
250g Room temp Unsalted Butter
200g Caster or Granulated Sugar
1tsp Vanilla Extract
250g Self Raising Flour or (Plain Flour + 1tbsp Baking Powder)

Instruction:
1. Pre-heat the oven to 170°C. Line 3 x 6 inch cake tins with nonstick baking paper.
2. In a large mixing bowl, cream together the butter, vanilla extract and sugar until light and fluffy.
3. Add 4 eggs one at a time, beating well between additions, until fully incorporated.
4. Carefully fold the sifted flour in using a spatula and spoon the batter evenly into the three bowls to colour the batter.
5. Bake for 25-30 minutes until springy to the touch and a cake tester comes out clean when inserted into the centre of the cakes.
6. Remove and allow the tins to cool on a wire rack for 5 minutes before turning out and peeling away the nonstick baking paper.

American Buttercream Ingredients-
600g Unsalted Butter
500g Sifted Icing Sugar
1tsp Vanilla Extract

Instruction:
1. Beat the butter and vanilla for 5 mins on high speed until pale and fluffy.
2. Add the icing sugar and continue beating for another 8 mins.
3. To make a smooth buttercream, microwave 3 scoops and add back to buttercream before mixing on low speed for 2 mins.
