This injera recipe is for people who have no access to teff

Ingredients
2 cups or 320g of rice flour
3 cups or 360g of all-purpose flour
1 tbsp or 11.26g of fenugreek powder
1.625L of cold water

Storing method: You can keep the injera on the counter for two-three days, depends on how cool or warm your temperature is, the cooler the better.
You can also keep it in the fridge for over a week or freeze (use the cling rap to rap each injera to avoid sticking to each other, especially if you want to freeze it).
