While I’ve never been the type of person to have anything against premade condiments, this maple bourbon glaze really goes elevate some pretty basic wings to the next level in a way which I doubt a bottle of store bought bbq sauce could. If you have even an extra five to ten minutes on hand, I would definitely recommend making your sauces at least once! The wings in this recipe are pretty basic, the recipe just utilizes some extra prep to ensure that they stay moist no matter if you're eating them directly after, or if you're eating them from frozen a month later! Maple Bourbon Chicken Wings (Makes Three Pounds)
Ingredients:
3 pound bag frozen chicken wing sections
1 lime sliced
1 tablespoon dried rosemary
1 tablespoon peppercorns
2 cloves garlic sliced
4 tablespoons kosher salt
4 cups cold water
2 tablespoons Cajun seasoning
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon oregano
2 teaspoons garlic powder (divided)
Handful cherry wood chips (optional)
1/2 cup maple syrup
1/2 cup bourbon
1/8 cup ketchup
1 teaspoon onion powder
Instructions
1. Mix together salt and water until salt is fully dissolved
2. Add lime, garlic, rosemary, and peppercorns into water brine mixture
3. Add chicken to brine, making sure each piece is fully submerged
4. Allow to brine from at least 2 hours to overnight
5. Preheat charcoal grill, once coals start to burn, add about a handful of cherry wood*
6. Combine Cajun seasoning, paprika, chili powder, oregano, and 1 teaspoon of garlic powder
7. Drain brining liquid off chicken, no need to pay dry
8. Coat chicken in seasoning blend
9. Add chicken to grill, placing lid onto smoke, opening the grill damper around 1/4 of the way (around 250 degrees F)
10. Smoke chicken wings for about 45 minutes to 1 hour
11. Turn wings over, place lid back over the wings and smoke for another 30 minutes or until wings reach an internal temperature of 165 degrees F or above
12. Remove wings from grill and set aside
13. In medium pot, combine bourbon, maple syrup, ketchup, and one teaspoon each onion and garlic powder
14. Bring sauce to a boil, making sure to stir fairly constantly
15. Remove sauce from heat
16. In a large bowl, add 4 - 6 wings of sauce with 2 - 3 tablespoons of maple bourbon glaze
17. Mix wings until combined with sauce
18. Repeat steps 16 and 17 until all wings are coated
19. Enjoy!
