✅ Ingredients:
• 6 eggs
• cottage cheese – 10,5 oz / 300 g
• bell pepper – 6 oz / 170 g
• mushrooms – 4,5 oz / 130 g
• cheese – 3 oz / 80 g
• all-purpose flour – 4,5 oz / 130 g
• baking powder – 1 tsp
• dried basil – 1 tsp
• scallion – 2 oz / 50 g
• salt – 1 tsp
• vegetable oil – 1 tbsp

✔︎ You will need:
• deep bowl
• muffin pan
• oven

📙 Preparation:
1. Chop up the bell pepper, mushrooms and scallion, grate the cheese.
2. In a deep bowl whisk the eggs and salt, add the cottage cheese, bell pepper, mushrooms, scallion, grated cheese and dried basil, stir well, add the flour and baking powder and incorporate carefully.
3. Brush the muffin pan with vegetable oil, fill with the mixture and sprinkle the cakes with grated cheese.
4. Preheat oven to 350°F / 180°C and bake the cakes for 20 minutes until golden color.
5. Serve the cottage cheese and veggies muffins for breakfast, lunch or dinner.
