WEDNESDAY
Breakfast
2 x paleo bread (recipe in my ebook
3 x free range eggs
1/2 avo

Lunch
Pumpkin & sweet potato soup with roasted chicken
800g free range chicken breast
1/2 a pumpkin, skin removed & diced
1 medium sweet potato, diced
1 brown onion, roughly diced
3 cloves garlic, roughly chopped
250-500ml natural chicken stock or 500ml water with nutra organics bone broth
200ml can coconut cream
1 tbsp cumin
1 tbsp curry powder
1 tbsp paprika
1 tsp chilli flakes
3-4 sprigs of thyme
1 tsp turmeric
1 tsp salt
1 tsp pepper
Extra salt, pepper & chilli flakes to taste
Place sweet potato, pumpkin, brown onion & garlic on a tray. Coat with olive oil, salt, pepper & thyme. Roast in the oven for about 30 minutes or until softened.
Coat chicken in salt, pepper, paprika and olive oil and place in oven for 22-25 minutes until cooked through.
Place into a large saucepan/pot and blend using a stick blender.
Add in the remainder of the ingredients (add stock in increments until you have the consistency you like, less stock if you like it thicker) continue to blend with stick blender until all ingredients combined well and the soup is smooth and your desired consistency!
Remove chicken breast from the oven and slice into small pieces.
Serve soup in a bowl and add chicken on top.
Add extra salt, pepper and chilli flakes to taste.
Snack: Protein ball (salted caramel from my ebook)
Chicken mince salad (this was actually so yummy with the chicken mince haha)

THURSDAY
Breakfast - Hayley Beiber Smoothie
1/2 cup almond milk
1 cup frozen organic strawberries
1/2 cup frozen organic banana
2 organic medjool dates (pitted)
1/2 tbsp manuka honey
30g vanilla protein powder

Lunch - slow cooked beef, broccolini & rice
Snack: rice cakes with cashew butter, banana, honey & a coconut water
Dinner: One Pan Mexican beef rice
Recipe:
500g beef mince
1 red capsicum, diced
1 brown onion, finely diced
3 cloves of garlic, minced
1 packet Mingle Taco seasoning (MICHAELA15 to save online)
1-2 stems of spring onion, finely sliced
Juice from 1/2 lime
2-4 cups natural beef stock (or enough to cover the rice with about 2cm above)
1- 2 cups white rice
Salt & pepper
1. In a large fry pan, saute the onions with olive oil until translucent.
2. Add garlic and cook for 30 seconds before adding beef mince and cook until browned.
3. Add in red capsicum and mingle seasoning packet. Stir through to coat in the seasoning and cook for another couple of minutes until fragrant.
4. Wash the rice thoroughly then add to the pan with the mince. Mix together.
5. Add the stock to the pan, stir through then simmer on low heat covered with a lid for about 20 minutes. Stir half way through.
6. Remove from heat and stir through spring onion, lime juice and salt and pepper.
