I considered this dish the ribeye steak you order at a fancy restaurant 🤭 I’m so happy to be able to share this recipe with you, as I believe we all deserve to enjoy a peaceful fancy meal with those we love. 📝Easy Mexican Appetizers -    • 3 EASY Mexican RESTAURANT APPETIZER R...  
Bake at 375 degrees (F) for 15 minutes or until cheese has melted

Chicken & Broth
2 chicken breast
4 cups water
1/4 onion
2 garlic cloves
1 bay leaf
1 tsp salt
1/2 tsp thyme
*save 2 cups of broth, onion, and garlic for enchilada sauce ☺️

Enchiladas Zuidas
12 count tortillas
8 to 10 tomatillos
1 Jalapeños (for spice add Serranos)
1/2 bunch cilantro
15oz Mexican cream (or heavy whipping cream, half & half)
3 cups Manchego cheese (or Munster, mozzarella, chihuahua)
1 Tbsp toasted sesame seeds
1 tsp salt
Dash of nutmeg
Use extra sauce for plating!

Tips & suggestions ❣️
Do not add sauce at the bottom of the baking dish, to prevent a soggy enchilada, add the warm sauce at the bottom instead
If you have a little sauce left, add 1/2 cup of chicken broth 2 Tbsp of cream, and keep warm as you bake the enchiladas
