WE ALL LOVE MOCHI !!!
Well, there are various kinds of mochi and many ways to make them. This is the easiest/fastest way to make it. Specifically, it is called "Dango" , dumplings. If you can get 白玉粉 or Mochiko, you almost win the game:) Standard recipe is Shiratama powder with water but I use Tofu instead of water. This gives the dango a better texture and hidden umami too. I've learned it from my tea ceremony teacher (20years ago...!).
You can mix Matcha powder with Shiratama/Mochiko so that nice bright green mochi can be made. Enjoy!

INGREDIENTS
▶︎DANGO DUMPLINGS
Shiratama ko (or Mochiko) 200g
Kinu/Silken Tofu 200g
Sugar 1tbs

▶︎MITARASH SAUCE
Water 150 mL
Soy sauce 40g
Sugar 50g
Cornstarch (or Katakuriko) 20g
Kombu seaweed (optional)
