How to cook the Rice Noodles with Brorhaer Soup which is the most famous historical dish of the Khmer people and has a delicious taste.
First, we need to clean the snakehead fish meat with salt, lemon, and lemongrass to reduce its sliminess and fishy smell. As for the fish belly and fish head, we need to clean them especially well by washing them two or three times until well clean.
When the fish is cleaned, we need to boil water by adding lemongrass and a little salt. Then we put in the fish head, fish belly, fish roe, and fish meat. Then we cover the pot and continue cooking until well done.
When the fish is well cooked, scoop it out and keep it for a while to be cool enough to debone it.
We have ingredients include garlic, galangal, kaffir lime leaves, lemongrass stalks, and turmeric. All these ingredients must be ground into a paste, or we can use a blender to blend them until smooth.
And these are other ingredients like Prahok (fermented fish cheese), peanuts and coconut milk, which are used when cooking.
Now we take all these ingredients and grind them finely.
After that, we put in the peanuts to grind them roughly, not too fine. Then we put in the fish meat to mix and grind together with the spices thoroughly for a great taste.
After the spices and fish meat have been well mixed, we must scoop it and mix it with coconut milk, then stir and mix thoroughly.
Now we take the boiled fish soup and put it in a pot, adding more coconut milk, then cover the pot to cook for about 3 to 5 minutes.
After the soup has boiled, we crumble in the prahok and continue to add ingredients such as MSG/chicken powder, sugar, and the fish meat mixture that has been ground together.
After putting in the fish meat, we put in the fish head, fish belly, and fish roe, then stir thoroughly to let the flavors blend, then cover the pot to cook until well done.
Now let's look at the vegetables: yard-long beans, bean sprouts, water lily , cabbage, banana flower, rice noodles, and fine salt with chili.
