The difference between steel and aluminum pans is HUGE! First off, the steel ones run about $8 less than the Lloyd's. They are also the ones all the South Shore bar pizza places use.
Your "burnt" or "laced" edges tend to stick to the aluminum pans (i.e. Lloyd's and American Metalcraft) but stay attached to your pizza in the steel ones. The coating is ultra slick. I have yet to need to scrape my pizzas free.
They're not paying me to endorse them, it's just a product I swear by and they're a family business that's been supplying all the restaurants since the beginning of bar pizza.
