I had bought this boneless butt (pork shoulder) and had plans to do something with it but my plans changed.... I decided to cook it and make some pulled pork (which I love by the way).... I took some rub I had and sprinkled it all over on each side and on the inside... Nothing fancy here and very straight forward... I just placed it together( not tied up) on the racking in the smoker

kept the temp between 250F - 275F the best I could for 3 hours
at 3 hours I peaked and it was looking good but needed more time
after another hour I decided i liked the color and then I should wrap it - took the temp and it was at 150F
after wrapping put it back in the smoker
it cooked a total of 8 hours for it to reach the 203F I got in this piece
I then let it rest for 45 mins
then I unwrapped it and dove it....

things like this are a labor of love and well worth the wait
