Today I am sharing with you a Magic Gravy! This is an all purpose gravy- 1 gravy for 50 dishes!
this 1 gravy for 50 dishes can actually be used to make more than 50 dishes and I have shown you that with the example of 5 dishes- kadhai paneer, aloo matar, kofta curry, chole masala and chicken masala.
This all purpose gravy can be made and refrigerated for a week and frozen for upto 6 months!

Recipes :

1 Gravy for 50 dishes
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 50 dishes

Ingredients:
4 large onions
8 large red tomatoes
4” ginger
6 -8 green chilies
1 tbsp garlic paste
2 tbsp red chili powder
2 tbsp coriander powder
1 tsp turmeric powder
2 tsp garam masala powder
1 tsp caraway seeds
1 tsp cumin seeds
2” cinnamon stick
2-3 bay leaves
5-6 green cardamoms
7-8 cloves
12-15 cashew nuts
1 tsp salt
½ cup oil

Method:
Finely mince the onions. Finely chop the tomatoes. Finely mince the green chilies and ginger.
Mix the powdered spices in a bowl with ½ cup water to make a paste.
Heat the oil in a pan. add the whole spices, salt and allow to splutter.
Add the minced onions and sauté over low heat till lightly colored. Add the chopped ginger chili and sauté till the onion is golden. Add the spice paste and cook till the oil comes on the surface. Add the chopped tomatoes and cook till the tomatoes are pulpy and oil comes on surface. Add the cashew paste and mix well. Cook for 3-4 minutes till oil comes on surface. Remove from heat. Cool and store. Use as required.
