I found this restaurant Rifugio Romano through Google Search whilst we were in Rome recently.
It was about a 35-minute walk from our hotel. It was jam-packed when we arrived.
We were accommodated even though we had no booking but could only use the table for 1 hour. Which was OK.

The service was quick - the review, well, you'll need to watch the video for that.
