Shina Soba-ya and the Shop's Owner, Minoru Sano
Mr. Minoru Sano is one of the most well-known ramen shop owners in Japan. the most famous in Japan. He went from being a chef of Western cuisine to find independence in running his own ramen shop for nearly 25 years, closely adhering to his own meticulous methods that have come to serve as a leading force in the ramen industry.
In this episode, we've put together scenes from Sano's discussion with shop owner of Taishoken in Higashi Ikebukuro, said to be the god of ramen, Mr. Yamagishi Kazuo; and also scenes from our visit to Sano's chicken farm where he raises Sansui jidori (range chicken) used at his shop even today. The chickens are bred especially for use with ramen.
