ingredients:

for paneer tikka marinations:

1/2 tsp red chilli powder
1/4 tsp garam masala
3/4 tsp coriander cumin powder
1/4 tsp black pepper powder
1 tsp kasuri methi
salt to taste
2 tsp oil + 1 tbsp oil
1/2 tsp ginger garlic paste
1/4 tsp dry ginger powder
1/4 tsp chat masala
2 tbsp thick curd
1/4 cup capsicum, diced
1 cup paneer, sliced
2 tbsp onion, sliced
1 tbsp lemon juice
1 tbsp coriander leaves

for rice preparation:

1 cup basmati rice
1 tbsp butter
1 tsp cumin seeds
salt to taste
1 1/2 cups of water

for paneer tikka gravy:

1 tbsp oil
1 tsp cumin seeds
1 cinnamon stick
3 cloves
3 cardamoms
1/2 cup onion, sliced
1 tsp ginger garlic paste
3 tomatoes, finely chopped
1 tsp kitchen king masala
1 tsp coriander powder
1 tsp red chilli powder
1 tsp kasuri methi
2 tbsp fried onions
salt to taste
1/2 cup water
2 tbsp fresh cream

other ingredients:

1-2 tbsp coriander leaves
1 tbsp fried onions
1/4 cup fresh cream
12-15 saffron strands
aluminium foil
veg raita to serve

method:

for paneer tikka marination mix:

take a mixing bowl and add red chilli powder, garam masala, coriander cumin powder, black pepper powder, kasuri methi, salt to taste, oil and ginger garlic paste.

mix well.

next add, dry ginger powder, chat masala and thick curd. mix to make a smooth paste.

further add diced capsicum, paneer cubes, sliced onions, lemon juice and coriander leaves.

mix well. cover and refrigerate it for at least 20 minutes.

after 20 minutes, heat 1 tbsp oil in a pan.


place marinated mixture and cook on both the sides till golden brown.

mix well and cook for 2 minutes.

for rice preparation:

take rice in a bowl, add water and soak for 20 minutes.

now heat butter in a pressure cooker and add cumin seeds.

once they sputter, add rice san salt to taste.

mix well and add water to it.

cover the lid and pressure cook for 3 whistles.

for paneer tikka gravy recipe:

heat oil in a pan and add cumin seeds, cinnamon stick, cloves and cardamoms.

once they sputter, add sliced onions and ginger garlic paste.

saute till onions turn golden.

next add in finely chopped tomatoes and cook till tomatoes turn tender and soft.

then add kitchen king masala, coriander cumin powder, red chilli powder, kasuri methi, fried onions and mix well.

further add salt, water and cook for 2 more minutes.

finally add paneer tikka mixture, fresh cream and mix well.

how to assemble:

first of all take any thick bottom vessel and make a layer of rice.

sprinkle some coriander leaves and fried onion over rice.

next make a layer of paneer tikka.

sprinkle some coriander leaves and fresh cream on it.

now again make a layer of rice over it.

sprinkle some coriander leaves, fresh cream, fried onions and saffron strands.

cover the vessel with foil and close the lid.

let it simmer on a very low flame for 10 minutes.

open the lid and aluminium foil.

serve restaurant style paneer tikka biryani with veg raita.
