Use 20g of almond cream per tart. (Preheat 160℃) 160℃ for 12~15mins. (15mins may be a bit too long. I don't like overcooking the almond cream as it gets too dry)

3. Strawberry Confit
Strawberry Puree 130g
Frozen Raspberries 30g
Sugar 15g
Pectin 2.8g
Lemon juice 2.8g

4. Strawberry Jelly
Strawberry Puree 75g
Sugar 10g
Agar Agar 0.7g

Hi! I’m Hanbit, professional pastry chef and CEO of Sugar Lane Baking Academy based in Seoul, Korea. Funny enough, my background had nothing to do with baking - far from it. I studied mathematics at university and then worked in finance, strategy consulting and IT. Then one day in 2018, I quit my job and enrolled at a pastry school. I have loved it ever since!
