My Wife's Family have been making this for years and its locked into their rotation... well I figured out how they make it and I think you'll love it too

Enchilada burritos
1lb ground beef
1/2 chopped onion
Taco seasoning too taste
1 can Rotel
8-10 tortillas
Colby Jack cheese (measure with your heart)
1 can cream of mushroom
1/2 can sink water

Preheat oven to 400*

In a pan on medium heat brown ground beef, onion, and taco seasoning

Use paper towel to drain excess grease if needed

Mix in one can of rotel and cheese stirring often til thickened and turn off heat

divide into equal amounts for each burrito plaing filling in center and rolling them, once assembled place in a lightly greased 9x13 baking pan

In a seperate bowl mix cream of mushroom and 1/2-1/3 of that can full of water

Pour over burritos, top with additional cheese too liking

Bake for 30-35 mins, then broil for 2-3 mins or til as golden brown as you like
