Ok, this one's a biggie but trust me, the result is SO worth it. Take a little bit of time, a little bit of love and some amazing ingredients to create a rich, flavourful cajun treat! So damn good!

GUMBO RECIPE:

Ingredients:

500g smoked sausage (I used Chorizo, you can also use Kielbasa or something like that)
1kg boneless, skinless chicken thighs
5 tbsp cajun seasoning
1tbsp olive oil
1 celery stalk - diced
1 onion - finely diced
1 green capsicum - diced
4 cloves of garlic - diced
1/2 cup chopped Okra (if you can find it)
1/2 cup olive oil for roux
1/2 cup flour
700ml chicken stock
200 ml tinned tomatoes
1 tbsp Worcestershire sauce

Method:

1. Season your chicken thighs with 1tbsp olive oil and 3 tbsp cajun seasoning. Place seasoned chicken to the side, slice your sausage, and fry in a large frypan until lightly browned and the oils are released. Remove sausage and quickly fry off the chicken in the sausage oils. You'll only need to do about 1-2 mins per side for the chicken, we're going for colour not cooked.

2. Once the meats are prepped get a large pot onto the stove and make a rough. add your 1/2 cup olive oil and 1/2 cup flour to the pot over a medium heat. Whisk the roux to combine and keep whisking gently for about 15 - 20 minutes to avoid the roux burning. Once you've got the roux to a light / mid brown colour

3. Once the roux is at the correct colour add in your diced veggies and okra, mixing to combine and searing for about 2 minutes. Add your sausage back in, the last 2 tbsp of cajun seasoning, the chicken stock and tinned tomatoes. Mix well to combine, bring to a light simmer then cover and simmer for 40 minutes

4. After 40 minutes roughly cut the chicken into bite sized pieces and ad back to the pot, with a dash of the Worcestershire sauce, mixing well to combine. leave to simmer for a further 20 minutes, then check the chicken for doneness.

5. Once the chicken is cooked thicken the stew with a cornflour and water slurry. Once you've got the thickness to a point where you are happy service immediately with rice.
