Masaledaar Sukka Chicken

INGREDIENTS:

4 tbsp of oil
1” cinnamon
2 star anise
4 green cardamom
4 cloves
10 peppercorns
4 onions finely chopped
1 tbsp of garlic paste
1 tbsp of ginger paste
3 medium sized tomatoes finely chopped
3/4th tsp of turmeric powder
2 tbsp of red chilli powder
1/4 cup - 1/2 cup of water
1 kg chicken
Salt to taste
1 tbsp of garam masala
1 tbsp of freshly chopped coriander
2 tbsp of lemon juices
1/2 dry coconut grated really fine
1 tbsp oil
3 onions sliced and fried
Mashed Potato
Pepper
Butter
Cream



METHOD:

Heat 4 tbsp of oil
Add 1” cinnamon
2 star anise
4 green cardamom
4 cloves
10 peppercorns
Add 4 onions finely chopped and brown them
Add 1 tbsp of garlic paste
1 tbsp of ginger paste
Sauté it well
Add 3 medium sized tomatoes finely chopped
Sauté it till the tomatoes are soft
Add spices - add 3/4th tsp of turmeric powder
Add 2 tbsp of red chilli powder
Mix well
Add 1/4 cup - 1/2 cup of water
Add 1 kg chicken
Fry the chicken on a high flame for 2-3 minutes
Add salt to taste
Mix well
Add 1 tbsp of garam masala
Mix it well
Sprinkle 1 tbsp of freshly chopped coriander
Cover and cook fir 5 minutes
Shut the flame
Drizzle 2 tbsp of lemon juices

Take 1/2 dry coconut grated really fine
Roast it with 1 tbsp oil
Make it crisp
Add 3 onions sliced and fried
Mix it well
Shut the flame
Add some freshly chopped coriander
Mix it well

Mashed Potato
Boiled potato with salt, pepper, butter and cream
Make a thin layer of boiled potato on a serving platter

Add 1/2 of the garnish to the sukka chicken
Place the chicken on the mashed potatoes
Take the rest of the garnish and sprinkle it on the chicken
Add freshly chopped coriander
