Apple crumble recipe:
115g butter
115g sugar
175g plain flour

Filling:
2-3 bramley apples (or any you prefer) , cored and cut to your desired size
1/2 tsp ground cinnamon
2 tbsp brown sugar
Little water

In a pan add apples, cinnamon, sugar and water and simmer for about 5-7 mins.
In a bowl mix butter, flour and sugar, crumble with fingers.
Spread out the cooked Apples into an oven proof dish, then sprinkle the crumble mixture on top, I sprinkled some oats for texture (optional).
Bake in preheated oven 180C for 30 mins or until golden brown.
Serve warm. Serve with hot or cold custard or vanilla ice cream.


Courgettes in Yogurt Sauce:
I don't have an exact recipe, but here's what I did..
Sauté the courgettes in a drizzle of oil on medium heat until caramelised. Cook minced meat until browned. You can skip doing them separately and brown the meat then add courgettes on top and cook until tender. Season with salt and pepper.

For the yogurt: For each 1 kg of yogurt I add 2 tbsp of cornflour.
1 kg yogurt
2 tsp cornflour
1/2 cup water ( I added 1 cup water because I used greek style yogurt which is thick)

Dissolve the cornflour in the water then mix them well into the yogurt.
Cook on medium heat and stir consistently until it reaches a boil.
Season with salt. If it's too thick add another 1/2 cup of water and bring to the boil.
If the consistency is not smooth, blend with a hand blender to make it smooth.

Then pour the yogurt into the meat and courgettes and mix, cook on low heat for a few minutes so the flavours bind together.


For the rice:
My mum taught me this method.
Soak the basmati rice in water for at least 20 mins, I like to use hot water to make the process faster, but cold water is good too. Then rinse the rice to remove the starch.
Add the washed rice a tbsp of butter into a pot, sauté for a minute or so then add the boiling water and season with salt.
Cook on the lowest heat for around 12 minutes of until rice is tender. Then fluff the rice gently and serve.

Rice measurements:
Measure the amount of basmati rice in cups, when cooking add the same amount of water you used of the rice and an extra 1/2 cup. So here I used 2 cups of rice, I added 2 1/2 cups of boiling water to cook.
If you make 1 cup of rice, add 1 1/2 cups of boiling water. So don't double the water only add 1/2 cup extra . I hope I made sense :)
