Launch the Settings app on your iPhone.

Scroll to Last Option Apps and again scroll to Mail.

Under the Message List section, disable the toggle Show Contact Photos, and that's it.

Move Back to Mail app and see the icon next to Email is not showing in the list.

To hide this category icon, Tap on more options at the top right corner.

Select the List View Option. That's it.

As you can see on my iPhone, app is revert to old mail app.
