Chocolate Chip Cookies (I almost always double this recipe!)
Ingredients
3/4 cup (1.5 sticks) salted butter, softened
3/4 cup light brown sugar
1/4 cup granulated sugar
1.5 large eggs (lightly beat one egg, then use half of it)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
2 cups chocolate chips (I like to mix chocolate chunks and mini chocolate chips – my favorite combo!)
I use the brand Enjoy Life Chocolate Chips.
Optional: For Valentine’s Day, I also added pink, white, and red M&M’s. (Fold these in by hand to prevent breaking.)
Sea salt for sprinkling on top. I don't add salt to the batter since I use salted butter.
Instructions
1. In a stand mixer with the paddle attachment, cream together the butter, brown sugar, and granulated sugar.
2. Add the eggs and vanilla extract and mix until just combined.
3. In a separate bowl, whisk together the flour and baking soda to evenly distribute.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
5. Fold in the chocolate chips (or mix of chocolate chunks and mini chips). If adding M&M’s, gently fold them in by hand to prevent breaking.
6. Use a cookie scoop (about ¼ cup size) to portion out the dough.
7. Sprinkle a little sea salt on top of each dough mound for extra flavor. Strategically place a few extra chocolate chips on top of each dough mound.
8. Place the cookie dough mounds on a plate or tray, cover with plastic wrap, and chill for at least 2 hours (or overnight for best results).
9. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
10. Arrange the chilled dough mounds 2 inches apart (about 8 per tray).
11. Bake for 11 minutes, or until the edges are set but the centers still look slightly glossy. Don't overbake your cookies!
12. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack. Let cookies set for 10 more minutes before eating!
