Patra Dokla Cake

Ingredients:

For Patra:

1 bunch Spinach (Palak)
1 cup Besan (Chickpea flour)
1 tsp Red chilli powder
1/4 tsp Hing (Asafoetida)
1/2 tsp Turmeric powder
1 tsp Cumin powder
1 tsp Coriander powder
1 tsp Ginger-green chilli paste
1 tsp Salt (adjust to taste)
3 tbsp Tamarind pulp
1 1/2 tbsp Jaggery
2 tbsp Water
For Dokla:

1 cup Besan (Chickpea flour)
1/8 tsp Turmeric powder
1 tbsp Sugar
1 tbsp Oil
1 tbsp Lemon juice
1 tsp Ginger-green chilly paste
1 tsp Salt
1 packet Eno (fruit salt)
For Tadka (Tempering):

1 tbsp Oil
1 tsp Mustard seeds
1 tbsp White sesame seeds
5 Green chillies, slit
Few Curry leaves
2 tbsp Sugar
1/2 tsp Salt
1/2 cup Water
Instructions:

For Patra:

Sieve besan to remove any lumps. Soak tamarind in 2 tbsp water for 15 minutes.
Grate jaggery and soak it in 2 tbsp water to make jaggery water.
Make a rough paste of ginger and green chillies.
In a bowl, mix besan, red chilli powder, turmeric powder, hing, cumin powder, coriander powder, ginger-green chilli paste, tamarind pulp, jaggery water, and salt. Adjust water for a smooth consistency.
Wash spinach leaves, remove stems, and pat dry. Arrange leaves and spread the besan mixture evenly on each leaf.
Roll the leaves tightly and secure with toothpicks if needed.
Steam the rolls for 25 minutes or until cooked through. Insert a knife to check doneness. Once done, remove from steam, cool, and cut into pieces.
For Dokla:

Sieve besan in a bowl. Add turmeric powder, sugar, salt, oil, lemon juice, ginger-green chilli paste, and Eno fruit salt. Mix well.
Grease a baking tin and arrange the Patra pieces inside.
Pour the prepared besan mixture over the Patra pieces.
Steam for 15 minutes or until set. Allow it to cool.
For Tadka:

Heat oil in a pan, add mustard seeds, sesame seeds, slit green chillies, curry leaves, sugar, and salt.
Once the seeds crackle, add water and bring to a boil to dissolve sugar.
Spread this tempering over the prepared Dokla.
Cut into slices and serve as a delicious Gujarati snack. Enjoy!
