Hello everyone 😊, today I want to show you guys how to make Alkaline Dumplings with Red Bean & Chestnut 豆沙栗子鹼水糭 for Dragon Boat Festival 端午節. It is another kind of traditional Chinese sticky rice dish made of glutinous rice but the rice is alkalinized with lye water stuffed with sweet filling like red bean paste, but I added with roasted chestnut to have mire texture to it, then wrapped it in bamboo leaves. They are cooked by boiling for 2 hours. After cooking, the alkaline dumplings change to bright yellow color. 😍You may serve it with granulated sugar and/or syrup on either warm or room temperature, it’s great to eat as breakfast, snack or as a dessert dish 😋

INGREDIENTS: (Makes 20 alkaline dumplings )
Bamboo leaves 60 pieces
Short grain sweet rice 1000g
Mashed red bean or/ red bean paste 430g
Roasted chestnuts 20 pieces

Short grain sweet rice marinated ingredients
Lye water 2 Tbsp
Custard powder 2 Tbsp
Oil 2 Tbsp

紅豆泥或/紅豆沙 430 克
烤栗子 20粒

糯米醃製配料
鹼水 2湯匙
蛋黃粉 2湯匙
油 2湯匙
