Typically burnt ends come from the point of a brisket, which could be pretty expensive. Chuck roast, on the other hand, is a great alternative when brisket prices are too high and you don't want to buy a whole brisket.

The prep step for these burned ends is very simple. Cube the chuck roast and season heavily with the BBQ rub. A quick tip: placing burned ends on a wire rack makes it easy to transfer them onto a cooker.

Fire up your smoker, and the burnt ends are ready to go on. About an hour into your cook, start spritzing the meat to keep it hydrated. After 2-3 hours, your chuck roast will be ready to wrap.

You know that your poor man's burnt ends are done when they feel tender and squishy. As a finishing touch, cover your burnt ends in BBQ sauce and let it smoke for another 20 min before serving.
