Aloo Bhujia Recipe:

Potato (boiled, medium-sized) - 2 nos
Besan - 1 Cup
Rice Flour - ¼ Cup
Turmeric Powder - ¼ tsp
Red Chilli Powder - ¾ tsp
Cumin Powder - ½ tsp
Garam Masala - ½ tsp
Asafoetida - A Pinch
Amchur Powder - ¼ tsp
Chaat Masala - 1 tsp
Salt - ¾ tsp
Mint Powder (optional) - ¾ tsp
Water (if required) - As Needed
Oil (for deep-frying) - As Needed

Cooking Instructions:

1. Peel and grate the boiled potatoes using the small grater.

2. Add all the other ingredients to the potatoes. Mix well to form a smooth dough.

3. Add water a few drops at a time, only if required.

4. Using an Idiyappam maker/murukku maker, fill the dough with the small hole attachment.

5. Heat oil in a kadai. Press the bhujia into hot oil.

6. Fry until it turns golden brown, turning halfway through. Remove from the oil.

7. Once it has cooled down, crush the aloo bhujia.

Cooking Tips:

1. To make homemade mint powder, dry mint leaves in the sun or in a pan on very low heat until crisp and dry. Powder it to make mint powder.
