Railway style cutlet

Portions serving: 4-5 pax
Preparation time: 10 mins
Cooking time: 30 mins

Ingredients
Oil 2 tbsp
Jeera ½ tbsp
Hing ½ tsp
Ginger chopped 1 tbsp
Green chilli chopped ½ tbsp
Carrot chopped ½ cup
French beans chopped ¼ cup
Beetroot chopped ½ cup
Green peas ¼ cup
Red chilli powder ½ tbsp
Turmeric powder 1 tsp
Garam masala 1 tsp
Coriander powder 1 tsp
Black salt ½ tbsp
Potato boiled & peeled 5-6 pcs
Amchur powder 1 tsp
Chopped fresh coriander 1 tbsp
Bread crumbs 2-3 tbsp
For batter:
Flour ½ cup
Salt 1 tsp
Black pepper 1 pinch
Red chilli powder 1 pinch
Turmeric powder 1 pinch
Garam masala 1 pinch

Method
Add oil in a medium hot pan, add jeera and let it crackle. Then add hing, chopped ginger, chopped green chillies and saute them.
Add chopped carrot, chopped french beans, green peas, chopped beetroot, saute and cook them for 3-4 mins.
Then add some salt, red chilli powder, turmeric powder, garam masala, coriander powder, black salt and cook them properly.
Transfer the mixture to a bowl and let it cool. Then grate the boiled potatoes and mix it with the cooked mixture.
Then add amchur powder, chopped fresh coriander and bread crumbs for binding.
Divide the mixture into small portions and shape them into a heart shape or a cutlet shape.
For batter, in a bowl, take refined flour, add salt, black pepper powder, red chilli powder, turmeric powder, garam masala, water and make a medium thick batter.
Spread bread crumbs in a plate, take the cutlet, dip it in the batter and cover it with the bread crumbs.
For frying, take medium hot oil and put the cutlet, fry it until it turns golden brown and crisp.
Remove it on a tissue paper and let the excess oil drain off.
Heat a pan, add butter and toss some green peas in it.
Railway style cutlets are ready to serve.
Garnish it with tossed green peas and serve it with ketchup.
