Bruschetta : (by permission)
2 boxes cherry/grape tomatoes (Roma tomatoes work great too)
1 half of large red onion or a whole small onion
Basil ( I used a 2oz container )
3 garlic cloves minced or diced
Salt: approximately 1 tsp
I drizzle a little olive oil in it as well.
We used two baguette breads for this recipe size
Slice the bread on a angle and put it in 425° oven till desired crispiness
Let cool off and fill with tomato mixture and top with fresh chopped fresh mozzarella and drizzle on top a balsamic glaze! So good!

Chocolate Crinkle Cookies : I didn't love these enough to share the recipe. Sorry!

Monster Cookies :
1 c. brown sugar
1 c. sugar
½ c. butter
1 (12 oz.) peanut butter
3 eggs
2 t. baking soda
4½ c. oatmeal
½ cup or more chocolate chips
½ pkg. M&M's
1 t. vanilla

Cream together sugar and butter, then add eggs; mix. Add remaining ingredients except chocolate chips and M&M's. Mix, then add chocolate chips and M&M's.
Chill overnight or for 4 hours. Roll into balls. Roll in powdered sugar. Bake at 350° for 8 minutes approximately.
