Desi Chicken Curry

Ingredients:
• 1 kg Desi chicken, cut into pieces
• 750 grams chopped onions
• 6-8 garlic cloves, minced
• 4-5 green chilies, slit
• A handful of fresh coriander leaves, chopped
• 3 tomatoes, chopped
• 1 tsp whole cumin seeds (sabut jeera)
• 4-5 cloves
• 2 badi elaichi (black cardamom)
• 1 stick of cinnamon
• 8-10 whole black peppercorns (gol mirch)
• 1 mace (javitri)
• 2 bay leaves (tez patta)
• 4-5 whole red chilies (sabut laal mirch)
• 1 tsp turmeric powder (haldi powder)
• 2 tsp coriander powder (dhaniya powder)
• 1 tsp black pepper powder (gol mirch powder)
• 1 tsp cumin powder (jeera powder)
• 1 tsp garam masala powder
• 1 tsp chicken masala powder (I used Everest brand)
• 4-5 tbsp mustard oil
• Salt to taste
Instructions:
1. Preparation:
o Heat 4-5 tablespoons of mustard oil in a large pan until it begins to smoke slightly.
o Reduce the heat and add 1 tsp of whole cumin seeds, 4-5 cloves, 2 badi elaichi, 1 stick of cinnamon, 8-10 whole black peppercorns, 2 bay leaves, and 4-5 whole red chilies. Sauté until the spices release their aroma.
2. Cook the Onions and Tomatoes:
o Add 6-8 minced garlic cloves and 4-5 slit green chilies. Sauté for another 2-3 minutes until they are light brown.
o Add 750 grams of chopped onions to the pan. Cook until the onions turn golden brown.
3. Add the Chicken and Spices:
o Add 1 kg of chicken pieces to the pan. Stir well to coat the chicken with the onion-garlic-green chili mixture.
o Lower the flame and cover the lid until the chicken releases its water.
o In a separate bowl, mix 1 tsp turmeric powder, 2 tsp coriander powder, 1 tsp black pepper powder, and 1 tbsp chicken masala powder with some water to make a paste.
o Once the chicken has released its water, add the spice paste to the chicken and mix thoroughly to ensure the spices are evenly distributed.
o Cover the pan and let the chicken cook on low heat until it is tender, stirring occasionally.
o Increase the flame and add 3 chopped tomatoes. Cook until they become soft and the oil starts to separate from the mixture.
o Cook on medium-high flame and add salt to taste. Mix well. Add chopped coriander leaves and mix well.
o Once the chicken is cooked and the oil separates from the gravy, add 1 tsp garam masala powder. Mix well.
o Let it simmer for another 2-3 minutes.
4. Garnish and Serve:
o Garnish with freshly chopped coriander leaves.
o Serve hot with rice or roti.
