Recipe:
1 cup gluten-free flour (or regular lotta gluten flour, if you're not allergic like me!)
1 cup gluten-free quick oats (regular quick oats will work too)
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter, melted and cooled (although I never wait for it to cool)
1 cup light brown sugar, packed
1/2 cup creamy peanut butter (or almond butter)
1 large egg
1 teaspoon vanilla extract
1 cup M&Ms
1 cup chocolate chips (I got the minis)

Preheat to 350. Combine dry ingredients (flour, oats, salt, baking soda.) Combine the wet ingredients in another bowl (butter, brown sugar, egg, vanilla). Combine dry ingredients into wet ingredient bowl. Add chocolates and M&M. Transfer to baking pan (line the pan with parchment paper) and press dough slightly and evenly throughout. Bake for 15 to 17 minutes (or till golden) and then if you wait for them to cool, they'll become cookie bars. If you don't, and you eat them hot, you'll need a spoon! ENJOY :)
