SUMMERTIME LIME PIE WITH CHOCOLATE COCONUT CRUST
Need a summertime pie with a fast gluten free crust? When Mom served me a plate of this cool dessert, I thought I was eating a cheesecake popsicle! And the crust of this lime pie is gluten free too!
It's easy to make. You can do it too. Let me show you how...
First put 6 tablespoons butter with 6 ounces of semisweet chocolate in a bowl to heat in the microwave for about 30 seconds. Stir it up. Melt it for a few seconds more if necessary. Then add 6 cups sweetened shredded coconut and stir until everything is moist. Then spread it out into a 9-inch pie pan. You can use your hands to press the mixture against the pie plate or the back of a spoon and then put it in the fridge to cool. Next, mix up 2 softened packages of cream cheese with 2 cans of sweetened condensed milk. We add about 6 tablespoons of lime juice and a few drops of green food coloring just for fun. Pour it into the cooled coconut crust and put it in the fridge for about two hours.
But if you want a REALLY cold treat, slice the chilled pie and then put it in the freezer for about an hour more. When you try it, you might think you're on a tropical island as the creamy coconut lime flavors melt in your mouth. More summertime please!

RECIPE for GLUTEN FREE SUMMERTIME LIME PIE
6 Tbsp. butter
6 oz. semisweet chocolate
6 c. sweetened shredded coconut
2 brick (16 oz) cream cheese, softened
6 tablespoons lime juice
2 cans (14 oz.) sweetened condensed milk
In large microwave-safe bowl, heat butter and chocolate on high in 30-second intervals until melted; stir in coconut. With hands or back of spoon, firmly press mixture into bottom and up side of pan. Cool in refrigerator completely.
Meanwhile, mix 2 softened packages of cream cheese with 2 cans sweetened condensed milk and 6 tablespoons lime juice. Add a few drops of green food coloring if desired. Blend well.
Pour into cooled coconut shell and chill in fridge for at least 2 hours.
For an extra cool treat: After the lime pie has been chilled, place in freezer for at least 1 hour. Set the pie out to thaw just a little before serving. Slices will need cut again but they thaw very quickly. Enjoy!
