This Indian comfort food combines the rich, nutty flavours of split pigeon peas and red lentils with aromatic spices and a tangy tamarind kick. Ingredients:
For the Dal:
Cumin – 1 tsp
Garlic Cloves – 5
Curry Leaves – A handful
Onion – 1 (chopped)
Tomato – 2 (chopped)
Green Chillies – 5 (slit)
Toor Dal/Split Pigeon Pea – 1 cup (soaked for 30 minutes)
Masoor Dal/Red Lentils – ½ cup (soaked for 30 minutes)
Turmeric – ¾ tsp
Salt – ¾ tsp
Water – As needed
Tamarind Water – Extracted from a lemon-sized tamarind
For the Tadka (Tempering):
Ghee – 1 tsp
Oil – 1 tbsp
Black Mustard Seeds – 1 tsp
Cumin – 1 tsp
Garlic Cloves – 5 (crushed)
Dry Red Chillies – 3
Curry Leaves – A handful
Hing/Asafoetida Powder – A pinch
Cumin & Fenugreek Powder – ¼ tsp
Salt – ½ tsp
Water – As needed
Coriander Leaves – For garnish
Cooking Instructions :
1️⃣ Cook the Dal Base: In a pressure cooker, heat oil and sauté cumin seeds, garlic cloves, curry leaves, onions, tomatoes, and green chillies until aromatic. Add the soaked toor dal and masoor dal, turmeric, salt, and water. Mix well, close the lid, and pressure cook for 3 whistles.
2️⃣ Add Tamarind Water: After the pressure releases, open the lid, add tamarind water, and bring the mixture to a gentle boil for a tangy twist.
3️⃣ Prepare the Tadka: Heat ghee and oil in a pan. Add mustard seeds, cumin seeds, crushed garlic, dry red chillies, curry leaves, hing, and cumin-fenugreek powder. Stir until fragrant.
4️⃣ Combine and Adjust: Pour the tempering over the dal, mix thoroughly, and adjust the consistency by adding water if needed. Check for seasoning and add salt to taste.
5️⃣ Garnish & Serve: Garnish the dal with freshly chopped coriander leaves and serve hot with steamed rice or roti.
