Ragi grain, otherwise known as 'finger millet' is a highly nutritious grain and is excellent in whole grain sourdough breads (as are other types of millet and non-gluten grains). This ragi bread recipe is very easy to make, is naturally fermented with sourdough starter, and uses a combination of fresh milled whole wheat flour and whole ragi flour in the recipe.

The special ingredient used to help bind this dough and give it a great structure and rise is psyllium husk. A small amount of psyllium is gelled with the water and sourdough starter to form the liquid portion of the recipe.
