Beef Pulao

Ingredients:
Beef ½ kg
Rice ½ kg
Yogurt 250 gram
Onion 2
Green chilies 10
Green coriander 1 bunch
Mint 1 bunch
Whole Black Pepper 1 tsp
Black cumin 1 tsp
Cloves 6
Green Cardamom 4
Black Cardamom 4
Salt 1-1/2 tsp
Ginger 1 piece
Garlic 6 cloves
Ginger garlic paste 1 tbsp
Oil or clarified butter 250 gram
Method
Add 4 glasses of water in beef. Now in muslin cloth put whole all spice, ginger and garlic and make pouch then add it in beef and let it cook. When 2 glass of water left then add beaten yogurt and cook for 10 minutes. Now separate stock and meat. Then heat oil or clarified butter and fry onion in it until golden brown. Then add ginger garlic paste and meat and sauté it well. Now add soaked rice and stock. When rice simmer then adds green coriander, mint, green chilies and crushed black cumin.

Aamchur walay Baingan

Ingredients:
Eggplant ½ kg
Onions 250 gm
Tomatoes 250 gm
Dried mango powder 2 tbsp
Ginger garlic 1 tbsp
Bay leaves 6
Mustard seeds 1 tsp
Turmeric powder 1 tsp
Salt ½ tsp
Red chili powder 1 tsp
Cumin seeds 1 tsp
Oil ½ cup
Green chilies 6
Fresh coriander ½ bunch

Method:
Heat oil and fry mustard seeds and bay leaves. Then add eggplant and fry on a high flame. Now add onions, ginger garlic, tomatoes, red chili powder, turmeric powder, salt and cumin seeds. Cover and cook well. Once the water is fry add dried mango powder, green chilies and fresh coriander. Serve hot.
