Panackelty | Pan Haggerty | Northeast England Corned Beef and Potato Stew

This is a proper classic from my childhood - just a shame I can't remember what it'd called! I had the impression it was something like fanackerty, but in truth there are loads of different spellings and nobody seems certain of what's right. And then there's very little agreement on what actually goes in it. I think Pan Haggerty and Panackelty are actually two distinct dishes. Panacalty, panaculty, panackerty etc is common around Sunderland and County Durham. It's sliced potatoes and onions with corned beef and maybe bacon, maybe sausages. Other leftover meats and vegetables may be included. Pan haggerty, on the other hand, consists of potatoes, onions and cheese. This version is common in Northumberland and can also be found on the west coast in Cumbria and Lancashire. There's also a version call 'pan aggie' that can be found in East Yorkshire as far south as Hull.

Whatever you call it, however you make it, it's fantastic comfort food.
