The Best Gluten-Free Brioche Hamburger Buns or Braided Bread Recipe

INGREDIENTS
DRY
300g Gluten Free Rice Flour Blend* (recipe below)
15g psyllium powder** (notes below)
3g xanthan gum
7g gluten-free baking powder*** (recipe link follows)
5g salt
50g sugar
7g instant yeast or 9g active dry yeast (see NOTE below)
10g sesame seeds for sprinkling (optional)
WET
250g warm milk or water
40g melted ghee**** (recipe below) or melted butter
2 large eggs + 1egg white (1 egg yolk separated for glazing)


METHOD

NOTE -active dry yeast needs to be activated by mixing with warm milk and sugar, but instant dry yeast can be added to dry ingredients.

Separate one egg yolk, cover and keep in the refrigerator for glazing. Sift and mix all dry ingredients (except sesame seeds). Add all wet ingredients and stir well by hand until smooth or use electric mixer. Cover with plastic wrap and put dough in the refrigerator for 12-24 hours.

When you are ready to bake - sprinkle some rice flour on the counter and gently knead the dough. For hamburger buns - divide the dough into 6 parts, shape it into round balls and transfer on baking tray covered with parchment paper.

Start pre-heating the oven to 375F (190C). Mix egg yolk with 1 tablespoon of milk or water, brush dough and sprinkle some sesame seeds (optional). Bake buns for 25-30 minutes and bread for 30-40 minutes.

Brush some melted ghee or butter for a shiny and soft crust. Cool on a wire rack and enjoy!


*Gluten Free Rice Flour Blend – 300g (Gum Free)
100g tapioca starch
200g white rice flour
