This is an amazing recipe, GUYANESE STYLE CHINESE FRIED RICE.

INGREDIENTS:
2 cups rice ( UNWASHED)(long grained parboiled rice)
2 tbsp soy sauce
1 tsp salt
1/2 -1 tbsp sugar (OPTIONAL)
sesame oil (4 tbsp total) ( 2 for rice + 2 for veggies)
black and white pepper (1 tsp each)
sweet pepper
pimento pepper
chili pepper
onion
garlic
ginger
scallions
cabbage
carrots
bora/bodi/Asian long beans
4 eggs
3 cups water (for rice)
chief fried rice seasoning salt

STEPS / METHOD:
HEAT PAN WITH SESAME OIL
ADD UNWASHED RICE, MIX WELL
ADD SALT, SUGAR & SOY SAUCE, MIX WELL.
ADD WATER (3 CUPS)
BRING TO A BOIL AND STIR CONSTANTLY.
LET HALF OF THE WATER EVAPORATES
THEN COVER, REDUCE HEAT TO A SIMMER AND COOK FOR ABOUT 30 MINUTES
REMOVE FROM PAN
FRY/SCRAMBLE EGGS ( ADD A PINCH OF SALT IF NEEDED)
REMOVE AND SET ASIDE WITH RICE
NOW ADD SESAME OIL
SAUTEE GARLIC, ONION AND GINGER.
ADD OTHER VEGGIES, SAUTEE FOR ABOUT 1 MINUTE ( EXCEPT SCALLIONS)
ADD CHIEF FRIED RICE SEASONING SALT ( APPROX 1 TBSP )
MIX WELL AGAIN
AND RICE AND EGG
BLACK AND WHITE PEPPER
ADD SCALLIONS AND COOK FOR 2 TO 3 MINUTES ON HIGH HEAT.
GARNISH WITH FINELY CHOPPED CABBAGE AND SCALLIONS.
