In the Kananaskis Backcountry, my wife Amanda and I hike out to Burstall Pass area on our snow shoes. next to a frozen lake on top of 5 feet of snow, I cook us a delicious hot #Quinoa #PowerBowl to warm us and give us energy for the calorie burning snowshoe hike.

With proper attention to nutritional intake, vegetarianism on the rise. It s now common for restaurants to feature vegetarian menus or meatless entrée alternatives. Grocery stores carry a large variety of vegetarian options, proving that there is a strong market for #Vegetarian meals. I will be cooking some more vegetarian recipes on my channel, not just meat all the time!

EQUIPMENT NEEDED:
Fuel Canister
Burner
Long handled spork
Fry pan (optional)
Bowl

QUINOA POWER BOWL INGREDIENTS:
Water, boiling: 1 cup
Quinoa: 1 cup
Butternut Squash (blanched), medium dice: 1/4 cup
Brussels sprouts (blanched), quartered: 1/4 cup
Bell Pepper, batonnet cut: 1/4 pepper
Pumpkin seeds (garnish): 2 fluid ounces
Zeus Juice Olive Oil: 2 fluid ounces
Greek Seasoning, Club House

MISE EN PLACE INSTRUCTIONS:
*Blanching is a two-step process in which foods are plunged into boiling water, usually for only a minute or two and then put into ice water to rapidly stop the cooking process.
**The batonnet (pronounced bah-tow-NAY) is creating a rectangular stick that measures 1/2 inch × 1/2 inch × 2 1/2 to 3 inches. It is also the starting point for another cut, the medium dice.

Cut all vegetables
Blanch your vegetables separately. (every vegetable needs different timing in the boiling water)
I keep all my vegetables in separate ziplock bags, but you can keep them in one single bag if you wish

ON TRAIL INSTRUCTIONS:
Boil water with Olive Oil and Greek seasoning
Add Quinoa to the water, bring back to a boil
Reduce heat to a simmer for 10 minutes (stir occasionally)
*OPTIONAL, add all vegetables for two minutes before next step
Remove from heat and sit covered for 5 minutes
Heat all vegetables in frying pan
Put quinoa in bowl, top with hot vegetables and garnish with pumpkin seeds!
