PANEER MANCHURIAN

Preparation time 10 minutes
Cooking time 15-20 minutes
Serve 2-4

Ingredients
For Frying Paneer
2-3 tbsp Oil, तेल
800 gms Paneer, cut into cubed, पनीर

For Paneer Manchurian
Remaining excess oil, बचा हुआ तेल
1 inch Ginger (peeled & finely chopped) अदरक
4-5 no. Garlic cloves, roughly chopped, लहसुन
1 no. medium Onion, cut into diced, प्याज
4-5 no. Green chillies (less spicy & chopped) हरी मिर्च
1 ½ tbsp Tender Coriander stems, finely chopped, धनिया के डंठल
Prepared Sauce Mix, तयार किया हुआ सॉस मिक्स
Fried paneer, तला हुआ पनीर
1-2 tbsp Cornstarch slurry, कॉर्नस्टार्च का घोल
½ cup Spring onion, roughly chopped, हरी प्याज
2-3 tbsp fresh Coriander leaves, roughly chopped, धनिया पत्ता

For Sauce Mix
2-3 tbsp Light soy sauce, सोया सॉस
2 heaped tbsp Tomato ketchup, टाॅमेटो केचप
1 heaped tbsp Schezwan sauce, शेज़वान सॉस
1 tsp Vinegar, सिरका
1 tsp Sugar, चीनी
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
⅓ cup Water, पानी

For Garnish
Coriander sprig, धनिया पत्ता
Spring onion, हरी प्याज

Process
For Frying Paneer
● In a shallow pan, add oil, once it’s hot, add paneer cubes and fry until golden brown from both the sides.
● Keep aside for further use.

For Paneer Manchurian
● In a deep kadai or wok, add remaining excess oil, add ginger, garlic and saute it for 2-3 minutes .
● Add onion, green chillies, tender coriander stems and saute it for a while.
● Add prepared sauce mix, fried paneer and give it a quick boil.
● Add cornstarch slurry to adjust the consistency and cook it well.
● Finish it with spring onion, fresh coriander leaves and give it a good toss.
● Transfer it to the serving dish, garnish it with coriander sprig and spring onion.
● Serve hot.

For Sauce Mix
● In a bowl, add light soy sauce, tomato ketchup, schezwan sauce, vinegar, sugar, black peppercorns, water and give a good mix.
● Keep aside for further use.
