Recipe :
Palak Egg Curry
Preparation Time: 20 minutes
Cooking Time: 30 Minutes
Serves: 3
Ingredients:
6 Eggs
3 Onions
1 tbsp Ginger Garlic Paste
1 tsp Cumin Seeds
2 Bay Leaves
4 Cloves
2 Black Cardamoms
¼ Mace
500g Spinach
2 Large Tomatoes
2 Green Chilies
1 Tsp Red Chilli Powder
1 Tsp Coriander Powder
1 Tsp Garam Masala Powder
3 Tbsp Oil
Salt to taste
1 tbsp Kasuri Methi
Coriander to garnish
Method:
Boil the eggs for at least 15 minutes to get hard boiled eggs.
Wash the spinach leaves and remove leaves from stems. Blanch the spinach leaves in boiling water for 3-4 minutes. Refresh the boiled leaves in cold water and grind the spinach leaves with 2 green chilies. Set aside.
Finely chop the onions. Puree the tomatoes.
Peel the boiled eggs and prick with a fork or make slits with a knife.
Heat the oil in a pan and fry the boiled eggs till golden on all sides.
Remove the eggs. To the same oil, add the whole spices and allow to splutter for 30 seconds. Add the chopped onions to the oil and sauté on medium heat till golden in color.
Add the powdered spices, ginger garlic paste and mix well. Add the pureed tomatoes and sauté till the masala is well cooked and oil floats on the top.
Add the pureed spinach and mix well. Add the fried eggs and mix well. Cook for at least 7-8 minutes till the spinach is well cooked and the oil floats on top. Add th eKASsuri Methi and stir. Serve hot.
