Hi friends - thank you for supporting the PSPCA! I'm back (this time in my home kitchen) with a demo of one of my all-time favorite snacks: rice paper summer rolls!Fill them with whatever you like - here we'll do sauteed squash and maitake mushrooms because it's fall and this is a GALA, for goodness' sake. On other nights, however, I love using rice paper wraps to fill leftover stir fry, salad ingredients (yo, veggie "chicken" caesar in these?!), fresh crunchy veggies + tofu with peanut sauce.. you name it - you can wrap it.
