Meat-less tacos

Ingredients

1 (16 oz) package extra-firm tofu, drained, crumbled and patted dry
2 tbsp reduced-sodium tamari or soy sauce
1 tsp chili powder
½ tsp garlic powder
½ tsp onion powder
1 tbsp extra-virgin olive oil
1 ripe avocado
1 tbsp vegan mayonnaise
1 tsp lemon juice
Pinch of salt
½ cup fresh salsa or pico de gallo
2 cups shredded iceberg lettuce
8 corn or flour tortillas, warmed
Fresh radishes

Directions
1. Heat oil in a large nonstick skillet over medium-high heat. Add the tofu and combine with the spices and the soy sauce. Cook, stirring occasionally, until nicely browned, 8 to 10 minutes.
2. Meanwhile mash the avocado, mix with the mayonnaise, lime juice and salt in a small bowl until smooth.
3. Serve the taco “meat” with the avocado topping, salsa and lettuce in tortillas. Serve topper with diced radishes if desired.
