For Green Paste
garlic 15-16 cloves
ginger 3-4 inch
green chilli 2 nos.
fresh coriander a handful

For Gravy
oil 2 tbsp
cumin seeds 1/2 tsp
onion 2 nos. (chopped)
turmeric powder 1/2 tbsp
spicy red chilli powder 2 tsp
coriander powder 1 tbsp
garam masala 1/2 tbsp
salt 1 bsp
garlic 15-20 cloves
fresh coriander handful (chopped)

Method
Place all of the Green Paste ingredients in a jar with a mixer grinder and crush them into a fine paste.
Slice the boiled eggs in half .
Moreover, take a pan or tawa and heat it up nicely over a high flame. Then, add oil to the tawa and let it to heat up.
The eggs should be placed cut-side down in the pan and fried till light golden brown on both sides. Add 1/4 tsp salt, 1/4 tsp turmeric powder, 1/4 tsp kashmiri red chili powder.
After frying, place the eggs in a bowl and keep them there while you prepare the gravy.

Prepare the gravy. Heat the pan to a high heat and add oil to it. When the oil is heated, add the onions and cumin seeds. Stir and fry the onions over high heat until they become golden brown.
When the onions start to turn a light golden brown, add the green paste you made earlier, mix, and cook for an additional two to three minutes, or until the onions are golden brown.
Reduce the heat even further, then add all of the powdered spices, salt, cloves of garlic, and a splash of boiling water. Stir thoroughly and simmer the masala until the oil separates.
When the masala starts to dry out while cooking, add more boiling water and simmer it some more.

Stir thoroughly after the masala has cooked and the oil has been released. At this point, taste the gravy and adjust the sourness and seasoning as needed.
Finally, top the eggs and gravy with some freshly chopped coriander. Continue to add the fried eggs into the sauce and coat them thoroughly.
Enjoy anda tawa masala with rotis or parathas.
